A Colorado chili that will punch your tongue right in the taste-buds! It's Crock-Pot Kickin’ Chipotle Chili!
4 Chicken Breasts - oh baby
1 red onion chopped up like crazy
1 15oz can stewed tomatoes
3 15oz cans cannellini beans drained out and rinsed off
2 cups low-sodium chicken broth
1/2 cup frozen yellow corn
2 tablespoons lime juice - pucker up
5 garlic cloves chopped up like crazy
2 tablespoon cumin
4 teaspoons chipotle powder
2 tablespoon smoked paprika
2 teaspoon salt
1 teaspoon black pepper
Put all this crap in your Crock-Pot and turn that baby on High for about 5 hours!
When done - shred up the chicken and scoop it into your favorites bowls. Get the nice ones out that you use for company. Get fancy. Pig out.
