Our producer Shannon has been begging me to post a vegan recipe for Crocktober - so here ya go. Enjoy - or not. Yuck.
1 cup chopped carrots - cause you're a rabbit
1 cup chopped mushrooms - enjoy your farts
1 cup chopped onions - don't cry
2 garlic cloves minced - enjoy your breath
1 1/2 cups brown lentils
1/2 cup quinoa - so healthy
1 8oz can tomato sauce
1/2 cup organic ketchup - yea, organic.....or just use the cheap stuff
2 tablespoons maple syrup - wait, no pancakes?
2 tablespoons hot sauce
2 tablespoons mustard
1 tablespoon chili powder - don’t sneeze
1 teaspoon paprika
Pinch of salt & pepper - not too hard, pinching hurts
3 - 4 cups vegetable broth - the tears of squeezed vegetables
Add everything into your crock
Stir and cover, cook on LOW for 5 hours- Check in on it from time to time to see if you need to add more vegetable tears if needed.
Serve between “warm buns” - also my nickname in college.
OR - if you wanted something with MEAT in it - toss the whole thing in the trash.
