1 boneless pork loin roast – oink oink
1 onion – chopped up like crazy, watch your fingers!
2 cups of your favorite barbecue sauce
3/4 cup of your favorite salsa
1 bag frozen stir-fry peppers mix – 1lb size
½ teaspoon salt
1 teaspoon ground cumin
1 tablespoon chili powder
1 bag of tortillas – now don’t be all weird and get the low carb ones, yuck. Get the classic flour ones ya weirdo.
Guac - if you're a high roller
Put the pig in your Crock-Pot with the chopped onion.
Mix up the barbecue sauce, salsa, chili powder, and cumin in a bowl then pour over the pork and onion. It’s like a delicious shower for your meat.
Cook on low for 8 hrs
When it’s done cooking remove the pork and shred. Return pork to crock and stir that mess up!
Toss in the stir-fry veggies and salt. Bump that beast to HIGH and cook for another 30 mins.
When done take a spoon (duh) and fill your tortillas with the pork mixture.
(Warm the tortillas first, like in a microwave or something. Do I have to explain everything?)
Serve with cheese, guac, and sour cream on top. Roll em’ up and shove them in your pie hole!
Serve with some Spanish rice and a Corona.
